Broccoli Salad

Ingredients

  • 6 Cups broccoli florets (about 2 1/2 heads)
  • 1 cup shredded Colby Jack
  • 2/3 cup dried Cranberries
  • 1/2 cup crumbled cooked bacon
  • 1/3 cup finely diced yellow onion

Dressing ingredients 

  • 3/4 cup Mayo
  • 1/4 cup plain non-fat Greek Yogurt (about 1 individual store bought serving container)
  • 1 1/2 Tblsp White Wine Vinegar
  • 3 Tblsp Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Directions

  1. Combine florets, Cheese, Cranberries, Bacon, and Onion in a large bowl
  2. In a small bowl whisk together the dressing ingredients
  3. Pour dressing over broccoli combo and mix together till everything is coated with dressing
  4. Serve or store in fridge for later.
