Fado’s Guinness Beef Stew

Ingredients:

  • 5 lb. beef stew meat
  • 1 carrot
  • 1 sm. onion, sliced
  • 1 stalk leek, chopped
  • 2 stalks celery, chopped
  • 4 medium potatoes, cut into 1 1/2 inch cubes
  • 1 cup flour
  • 1/4 cup tomato paste
  • 2 quarts beef stock
  • 1 cup red wine
  • 1/2 cup Guinness beer
  • 2 teaspoons salt
  • 1 teaspoon pepper

 


Directions:

  1. Saute beef remove and set aside.
  2. In same pan saute vegetables, except the potatoes.
  3. Return meat to vegetables after sauteing.
  4. Add flour & tomato paste, mix together and cook for 2 minutes.
  5. Add wine, beer and mix well.
  6. Add beef stock and let this all come to a simmer, then reduce heat and cook until carrots are tender. (About 1 hr.)
  7. While this is cooking, cook potatoes off separately. When potatoes are finished season with salt and pepper.
  8. Place some potatoes in a bowl and ladle the stew on top.  Serve Hot and with bread.
