Twice Baked Potato Casserole

  • 8 medium potatoes, scrubbed and dried
  • 2 Tblsp olive oil
  • 1 Tblsp kosher salt
  • ¾ pound sliced bacon, cooked and crumbled
  • 2 cups shredded sharp cheddar cheese
  • ¾ cup mayonnaise
  • ½ cup sour cream
  • 5-6 green onions, sliced
  • salt and pepper to taste

Tip; You can pierce the potatoes with a fork, place in a plastic shopping bag with a bit of water and place in microwave for 5 min. intervals until potatoes are baked potato tender.  This saves time.
